Green bean

It arrives raw from farms in Tarrazú and Los Santos. Dense, hard and without aroma. Not yet coffee.

Roast

Twelve minutes in the drum. Everything is born here: the acidity, the sweetness, the body.

Rest

Forty-eight hours for the bean to release its gas and for the flavour to settle.

Cup

Ground to order. We never serve a bean more than ten days past its roast.
